Start the year with truffles: The “Sunday Specials” series continues

On Sunday, January 29th, 2023, our first Sunday Special of the year with the focus on truffles, will finally take place. From 4:00 p.m. you can take the opportunity to conveniently try a wide variety of truffles and learn tips and tricks for procurement and preparation at live stations. Chef Florian Peters, together with master chef and gastronomic director of the EUREF-Campus Berlin, Thomas Kammeier, has delved deeply into the topic and put together a creative menu to make the special variety of truffles tangible.

The flying menu offers a best-of truffle selection – from the welcome snacks with mushroom flan with crostini, mushroom soil and dwarf parsley as well as truffle brie with pumpernickel, plum and pecan brittle to the dessert – a white chocolate -Cream with Perigord truffle, pear, rosehip and roasted macadamia nut. The other six stations on the menu also amaze with the combination of different seasonal classics or opposites: veal tartare with Japanese mayonnaise, black winter truffle, organic egg yolk and tramezzini, Vacherin Mont-d’Or with truffle-date cream, Bianchetti truffle and Piedmont hazelnuts, creamy onsen egg with black winter truffle, Joselito Ibérico ham, creamed spinach and roasted crumbs, oxtail tortelloni with Perigord truffle, truffle nage, purslane and truffle dressing, winter cod with raw mushroom, white Truffle velouté, Brussels sprouts and nut butters and finally braised Irish grass-fed beef cheek and Madeira truffle jus, salsify and borettane onion.

Of course, you determine the order of pleasure yourself while strolling. The Sunday Special is accompanied by a fine selection of wines, attentive service and a kitchen team who are happy to share their knowledge of truffles with you. The truffle special on January 29 – from 4:00 p.m. to 9:00 p.m. – costs 198 euros per person. The following monthly Sunday Specials are dedicated to other culinary delights such as seafood, beef, Mother’s Day or Pentecost. You can find an overview of all dates here.
